Please don't scare the birds! Doves are in fact semi-wild creatures.
They are not dogs. I went to one wedding where the couple released two
white doves and the bride was incessantly kissing and cooing at her
dove's head, oblivious to the fact that the poor creature was terrified
and desperately trying to get away. The groom's bird was much relaxed
because he held his calmly. Doves are low on the food chain and do not
want any creature's mouth next to their heads! Don't leave your guests
with the image of a frightened struggle. Hold the doves gently and when
it is time to release them slowly lift your arms up and away from your
body, leaning back slightly as you let go to give them maximum space
for their wings to open and gracefully take flight. This will also make
for great pictures of your release. 
Many couples start their first dance on the floor. This tends to add
to the awkwardness of the moment. You will almost always have to wait
at least 10 or 15 seconds for the music to start. Even from a professional's
viewpoint, standing still with 200 eyes watching you can be nerve-wracking
if you are doing nothing. When the music finally starts, couples begin
dancing with a jerky start. We have all of our Grooms lead their Brides
out onto the floor as the music starts, take dance
hold and then start dancing. It is simple and elegant, shows off the
bride more and leads to a sense of anticipation on the part of the guests.
Additionally it can be hard for the groom to hear the beat and be on
time during the musical introduction of a piece of music, which often
can be very different rhythmically from the rest of the song. Having
him escort you onto the dance floor will not only add a touch of confident
and regal ambiance to the moment, but also make your Groom's life easier!
